Balsamic Soy Roasted Garlic Mushrooms are a flavorful and easy-to-make dish that combines the rich taste of balsamic vinegar and soy sauce with the earthy flavor of roasted mushrooms.

  • 8 cups fresh mushrooms, cleaned and halved
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the balsamic vinegar, soy sauce, olive oil, minced garlic, thyme, black pepper, and salt. Whisk until well blended.
  3. Add the halved mushrooms to the bowl and toss until they are evenly coated with the marinade.
  4. Spread the mushrooms in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are tender and caramelized.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
