A tender and flavorful Balsamic Beef Roast that is perfect for a hearty meal.

Ingredients

  • 2 to 3 pounds beef chuck roast
  • 1 cup balsamic vinegar
  • 1/2 cup beef broth
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into quarters

Instructions

  1. Preheat your oven to 325°F.
  2. Season the beef roast generously with salt and pepper on all sides.
  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast for about 3-4 minutes on each side until browned. Remove the roast and set aside.
  4. In the same pot, add the sliced onion and cook for about 3 minutes until softened.
  5. Stir in the minced garlic, balsamic vinegar, beef broth, brown sugar, Dijon mustard, thyme, and rosemary. Bring the mixture to a simmer.
  6. Return the beef roast to the pot, then add the carrots and potatoes around the roast.
  7. Cover the pot with a lid and transfer it to the preheated oven. Roast for 3 to 4 hours, or until the beef is tender and easily shreds with a fork.
  8. Once done, remove the pot from the oven and let it rest for 10-15 minutes before slicing. Serve with the vegetables and drizzled with the cooking juices.

Notes

  • For a richer flavor, marinate the beef in the balsamic mixture overnight before cooking.
  • To make it a one-pot meal, add your favorite vegetables like green beans or bell peppers during the last hour of cooking.
