1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, Dijon mustard, honey, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until well combined, but do not overmix.
Using your hands, form the mixture into meatballs about 1 inch in diameter and place them on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
Remove from the oven and let them cool for a few minutes before serving.
Notes
For added flavor, try mixing in some chopped green onions or a teaspoon of smoked paprika into the meatball mixture.
You can also serve the meatballs with a dipping sauce made from Greek yogurt mixed with a bit of mustard and honey for a tangy twist.
