Ingredients
Scale
4 cod fillets (6 oz each)
1/2 cup mayonnaise
2 tbsp Dijon mustard
2 tbsp Old Bay seasoning
1/2 cup panko breadcrumbs
1/4 cup Parmesan cheese, grated
1 tbsp fresh lemon juice
2 cloves garlic, minced
1 tbsp olive oil
Salt and black pepper to taste
Instructions
Prep the Cod: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the cod fillets on the sheet, brush them lightly with olive oil, and season with salt and black pepper.
Mix the Savory Mayo: In a small bowl, vigorously mix the mayonnaise, Dijon mustard, Old Bay seasoning, minced garlic, and fresh lemon juice until smooth.
Coat the Fish: Spread this rich, savory mayo mixture evenly and generously over the top of each cod fillet.
Add the Crunch: In another bowl, combine the panko breadcrumbs and grated Parmesan cheese. Press this crispy mixture heavily into the mayo layer on each fillet to ensure a perfectly thick crust.
Bake to Golden: Bake for 12 to 14 minutes until the fish flakes easily with a fork and the crust turns beautifully golden brown and crispy. Serve immediately while hot!
Notes
For a spicier kick, consider adding a dash of hot sauce to the mayo mixture.
Ensure the cod is fresh for the best flavor and texture.
Leftovers can be stored in the refrigerator for up to 2 days.
