Baconnaise Patty Melts with Caramelized Onions delightfully serve up comfort!

Ingredients

Scale
  • 1 ½ lbs 80/20 ground beef chuck
  • 8 slices thick-cut bacon
  • 1 large yellow onion, thinly sliced
  • 2 tbsp unsalted butter
  • 2 tsp Worcestershire sauce
  • 8 slices Texas toast or thick sandwich bread
  • 8 slices Swiss or American cheese
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 3–4 tbsp softened butter, for grilling the bread
  • 4 slices cooked crispy bacon, finely chopped
  • ½ cup mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp fresh lemon juice
  • Pinch of cayenne pepper, optional

Instructions

  1. Cook the Bacon: Heat a large skillet over medium heat. Cook all 8 bacon slices until browned and crispy, about 3–4 minutes per side. Transfer to a paper towel-lined plate. Set aside 4 whole slices for the sandwiches and finely chop the remaining 4 slices for the baconnaise. Reserve about 1 tbsp of bacon grease for the onions.
  2. Make the Baconnaise: In a small bowl, combine the mayonnaise, chopped bacon, Dijon mustard, smoked paprika, garlic powder, lemon juice, and cayenne pepper, if using. Stir until everything is evenly mixed. Cover and refrigerate for 15–30 minutes.
  3. Caramelize the Onions: Melt 2 tbsp butter in a large skillet over medium-low heat. Add the reserved bacon grease and thinly sliced onions. Season lightly with salt. Cook for 15–20 minutes, stirring every few minutes, until the onions are soft and golden. Stir in Worcestershire sauce during the final 5 minutes.
  4. Form and Cook the Beef Patties: Divide the ground beef into 4 equal portions. Shape each portion into a thin patty. Season both sides with salt and black pepper. Heat a skillet over medium-high heat and cook the patties for 3–4 minutes per side.
  5. Assemble the Patty Melts: Spread softened butter on one side of each bread slice. On the unbuttered side of 4 slices, spread baconnaise, add cheese, a beef patty, caramelized onions, and bacon. Top with another slice of cheese and cover with remaining bread slices, buttered side facing outward.
  6. Grill Until Golden and Melty: Heat a skillet over medium heat. Place the assembled sandwiches in the pan and cook for 3–4 minutes on each side until golden brown and the cheese is melted.
  7. Slice and Serve: Let the sandwiches rest for 1–2 minutes before cutting them diagonally in half. Serve immediately.

Notes

  • Use 80/20 ground beef for juicy patties.
  • Choose thick bread like Texas toast.
  • Don’t rush the onions; slow caramelization is key.
  • Use medium heat for grilling to melt cheese properly.
  • Customize cheese types as desired.
