12 fresh jalapeño peppers
225 g cream cheese, softened
100 g shredded sharp cheddar cheese
60 g shredded Monterey Jack cheese
2 cloves garlic, minced
2 green onions, finely sliced
½ teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon black pepper
12 slices bacon, cut in half
1 tablespoon honey, optional
Toothpicks, as needed
Instructions
Preheat the oven: Heat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
Prepare the jalapeños: Slice each jalapeño lengthwise. Carefully remove the seeds and membranes. For less heat, remove all the white membranes.
Make the filling: In a bowl, combine the softened cream cheese, cheddar, Monterey Jack, garlic, green onions, smoked paprika, garlic powder, and black pepper. Mix until smooth.
Stuff the peppers: Spoon the cheese mixture generously into each jalapeño half. Don’t overfill, as the cheese will expand slightly during baking.
Wrap with bacon: Wrap each stuffed jalapeño with ½ slice of bacon. Secure with a toothpick if necessary.
Arrange: Place the poppers seam-side down on the prepared rack.
Bake: Bake for 20–25 minutes, turning once if needed, until the bacon is browned and crisp and the cheese is hot and bubbly.
Optional glaze: During the last 5 minutes, brush the bacon lightly with honey for a sweet-and-savory finish.
Broil for extra crispiness: If desired, broil for 1–2 minutes, watching closely so the bacon doesn’t burn.
Rest and serve: Let the poppers rest for 5 minutes before serving.
Notes
For a milder flavor, remove all the seeds and membranes from the jalapeños.
Feel free to experiment with different types of cheese for the filling.
These poppers can be made ahead of time and refrigerated before baking.
