Ingredients
Scale
2 lbs ground beef
1 small onion, finely diced
3 cloves garlic, minced
1 cup breadcrumbs
2 large eggs
½ cup milk
2 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp black pepper
8 oz mozzarella or cheddar cheese, cut into sticks
10–12 slices bacon
½ cup ketchup (for glaze)
¼ cup brown sugar (for glaze)
1 tbsp Worcestershire sauce (for glaze)
1 tbsp yellow mustard (for glaze)
Instructions
Preheat oven to 375°F. Line a baking sheet with foil and lightly grease it.
In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, ketchup, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix gently until combined.
Place the meat mixture on a sheet of parchment paper and flatten it into a rectangle about ½-inch thick.
Arrange the cheese sticks down the center, leaving space around the edges.
Carefully roll the meatloaf around the cheese, pinching the seams closed so the cheese stays inside.
Lay the bacon slices side by side on the prepared baking sheet. Place the meatloaf on top and wrap the bacon around it, tucking the ends underneath.
Mix the glaze ingredients in a small bowl. Brush about half of the glaze over the bacon-wrapped meatloaf.
Bake for 50–60 minutes, then brush with the remaining glaze.
Continue baking for 10–15 minutes, until the bacon is crisp and the meatloaf reaches 160°F in the center.
Let rest for 10–15 minutes before slicing.
Notes
Let the meatloaf rest before cutting so the cheese stays inside instead of spilling out immediately.
