  • 4 boneless, skinless chicken breasts — about 680 g
  • 1 tablespoon (15 mL) olive oil
  • 1 teaspoon (5 mL) paprika
  • ½ teaspoon (2.5 mL) garlic powder

  • ½ teaspoon (2.5 mL) salt
  • ¼ teaspoon (1.25 mL) black pepper
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (50 g) shredded cheddar cheese
  • 6 slices bacon — about 85 g, cooked and crumbled
  • 2 tablespoons (30 mL) ranch seasoning mix
  • 2 tablespoons (30 mL) chopped fresh parsley or chives
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven: Set the oven to 375°F (190°C). Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish.
  2. Make the filling: In a bowl, combine the softened cream cheese, cheddar cheese, crumbled bacon, ranch seasoning, parsley, and garlic. Mix until well combined.
  3. Prepare the chicken: Pat the chicken breasts dry. Using a sharp knife, cut a pocket horizontally into the thickest part of each breast, being careful not to cut all the way through.
  4. Stuff the chicken: Divide the cream cheese mixture evenly among the chicken breasts. Stuff each pocket and press the edges together. Secure with toothpicks if needed.
  5. Season: Rub the outside of the chicken with olive oil. Combine paprika, garlic powder, onion powder, salt, and black pepper, then sprinkle evenly over the chicken.
  6. Bake: Place the stuffed chicken in the prepared baking dish. Bake for 25–35 minutes, depending on thickness, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Brown the top: For a golden finish, broil for 1–2 minutes, watching carefully.
  8. Rest: Remove from the oven and let the chicken rest for 5 minutes before slicing.
  9. Serve: Garnish with extra crumbled bacon, chopped chives, or parsley. Serve with roasted potatoes, steamed vegetables, rice, or a fresh salad.
