Bacon Fried Rice is a delicious and comforting dish made with crispy bacon, vegetables, and flavorful seasonings, perfect for using up leftover rice.

Ingredients

  • 3 cups cooked white rice (preferably day-old)
  • 6 strips of bacon, chopped
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
  2. Add the frozen peas and carrots to the skillet and sauté for about 3-4 minutes until heated through.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  4. Add the cooked rice to the skillet, breaking up any clumps. Stir in the crispy bacon, soy sauce, sesame oil, garlic powder, salt, and pepper. Cook for an additional 3-5 minutes, stirring frequently until everything is heated through and well combined.
  5. Remove from heat and stir in the sliced green onions. Serve hot.

Notes

  • For a spicier version, add a teaspoon of sriracha or chili paste while cooking.
  • Substitute the bacon with diced chicken or shrimp for a different protein option.
