A fun and tasty twist on a classic dish, this Bacon Cheeseburger Meatloaf combines the flavors of a cheeseburger with the comfort of meatloaf.

  • 2 lbs ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ½ cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup (for topping)
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard (for topping)
  • ½ cup shredded cheddar cheese (for topping)
  • 2 slices bacon, cooked and crumbled (for topping)

Instructions

  1. Preheat the oven to 375°F. Line a loaf pan or baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, cooked bacon, cheddar cheese, onion, garlic, eggs, breadcrumbs, ketchup, mustard, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper.
  3. Mix gently with your hands until everything is evenly combined. Avoid overmixing.
  4. Transfer the mixture to the prepared loaf pan and gently press it into an even loaf.
  5. In a small bowl, mix ketchup, brown sugar, and mustard. Spread about half of the mixture over the meatloaf.
  6. Bake for 45 minutes.
  7. Remove from the oven and spread the remaining glaze over the top. Sprinkle with shredded cheddar and crumbled bacon.
  8. Return to the oven and bake for another 10–20 minutes, or until the center reaches 160°F.
  9. Let the meatloaf rest for 10 minutes before slicing.
  10. Serve warm with extra ketchup, pickles, or classic burger-style toppings.

Notes

  • For an extra cheeseburger-style center, place ½ cup sliced or shredded cheddar in the middle of the meat mixture before shaping the loaf.
