Bacon Cheddar Stuffed Onion Bombs are savory delights filled with a mixture of ground beef, bacon, and cheddar cheese, all encased in tender onion layers and glazed to perfection.

  • 4 large yellow onions
  • 1 lb ground beef
  • 5 oz bacon, cooked and finely chopped
  • 5 oz sharp cheddar cheese, cut into small cubes
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard

Instructions

  1. Preheat the oven to 375°F. Lightly grease a baking dish.
  2. Cut the tops and bottoms off the onions and carefully peel them. Separate the onions into individual layers, keeping the larger outer layers intact.
  3. In a large bowl, combine the ground beef, chopped bacon, breadcrumbs, egg, Parmesan, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined.
  4. Take one onion layer and place a portion of the beef mixture inside. Press a cube of cheddar into the center and completely surround it with the beef mixture.
  5. Place the meat-filled ball inside another onion layer. Continue adding onion layers until each bomb is securely enclosed.
  6. In a small bowl, mix together the ketchup, brown sugar, Worcestershire sauce, and mustard.
  7. Place the onion bombs in the prepared baking dish and brush generously with the glaze.
  8. Cover loosely with foil and bake for 30 minutes.
  9. Remove the foil, brush with additional glaze, and bake uncovered for another 15–20 minutes, or until the beef reaches 160°F internally and the onions are tender.
  10. Let the onion bombs rest for 5 minutes before serving.
