  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined and press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Pour the cream cheese mixture over the crust.
  4. Toss the diced apples with cinnamon and nutmeg, then spread evenly over the cream cheese layer.
  5. In a separate bowl, combine brown sugar, rolled oats, and flour. Mix in the melted butter until crumbly and sprinkle over the apples.
  6. Bake for 50-60 minutes, or until the center is set and the top is lightly golden. Let cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight before serving.
