2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
2 cups peeled and diced apples (about 2 medium apples)
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 cup brown sugar
1 cup rolled oats
1/2 cup all-purpose flour
Instructions
Preheat the oven to 325°F.
In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined and press into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Pour the cream cheese mixture over the crust.
Toss the diced apples with cinnamon and nutmeg, then spread evenly over the cream cheese layer.
In a separate bowl, combine brown sugar, rolled oats, and flour. Mix in the melted butter until crumbly and sprinkle over the apples.
Bake for 50-60 minutes, or until the center is set and the top is lightly golden. Let cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight before serving.
Notes
For a caramel twist, drizzle caramel sauce over the cheesecake before serving.
Substitute apples with pears or peaches for a different flavor profile.
