1 cup unsalted butter, melted
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup diced apples (about 1 medium apple)
1/2 cup chopped walnuts (optional)
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
Add the eggs and vanilla extract to the butter mixture, whisking until fully combined.
In a separate bowl, mix the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the diced apples and walnuts (if using) until evenly distributed.
Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
While the blondies are baking, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until creamy.
Gradually add the powdered sugar, maple syrup, and vanilla extract, mixing until smooth and fluffy.
Once the blondies are done baking, allow them to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Once cooled, spread the maple cream cheese frosting evenly over the blondies. Cut into squares and serve.
Notes
For extra flavor, add 1/2 teaspoon of nutmeg or ginger to the batter.
Substitute the apples with pears or peaches for a different fruity twist.
