4 boneless pork chops, about 6 oz each
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp ground cinnamon
1 cup apple cider
2 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp butter
1 small apple, thinly sliced
1 tbsp chopped fresh parsley
2 lb sweet potatoes, peeled and cubed
3 tbsp butter
1/4 cup milk
2 tbsp maple syrup
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp black pepper
Instructions
Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 15–20 minutes, until fork-tender.
Drain well and return the sweet potatoes to the pot. Add butter, milk, maple syrup, cinnamon, salt, and black pepper. Mash until smooth and creamy. Keep warm.
Season the pork chops with salt, pepper, thyme, garlic powder, and cinnamon.
Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 3–4 minutes per side, until nicely browned. Remove and set aside.
In the same skillet, add the sliced apple and cook for 2–3 minutes until slightly softened.
Add the apple cider, maple syrup, and Dijon mustard. Stir well and simmer for 3–5 minutes, allowing the sauce to reduce slightly.
Return the pork chops to the skillet and spoon the cider sauce over them. Cook until the pork reaches 145°F internally, about 2–4 minutes depending on thickness.
Stir the butter into the sauce until glossy.
Serve the pork and apples over or alongside the mashed sweet potatoes. Spoon the warm apple cider sauce over the top and garnish with parsley.
Notes
Ensure the pork is cooked to an internal temperature of 145°F for safety.
Feel free to adjust the sweetness of the mashed sweet potatoes by adding more or less maple syrup.
Fresh herbs can be used for garnish for added flavor.
