A quick and easy recipe for oven-baked boneless skinless chicken thighs that are flavorful and juicy, perfect for a weeknight dinner.

Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F.
  2. In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for about 10 minutes for better flavor.
  4. Place the marinated chicken thighs in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F and the chicken is golden brown.
  6. If using, drizzle fresh lemon juice over the chicken before serving.
  7. Garnish with chopped fresh parsley if desired.

Notes

  • For extra flavor, try adding a teaspoon of your favorite hot sauce to the marinade.
  • You can substitute chicken thighs with boneless skinless chicken breasts, but adjust the cooking time to ensure they don’t dry out.
