2 medium zucchinis, grated
1 teaspoon salt
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini.
Add the mozzarella cheese, Parmesan cheese, garlic powder, black pepper, and red pepper flakes (if using) to the drained zucchini. Mix everything together until well combined.
Using a tablespoon, scoop out the mixture and form small mounds on the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of the spoon.
Drizzle olive oil over the tops of the zucchini mounds for added flavor and crispiness.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving. Enjoy your crispy snacks!
Notes
For a twist, try adding chopped fresh herbs like basil or oregano to the mixture for extra flavor.
You can also substitute the mozzarella with cheddar cheese for a different taste.
