2 cups grated zucchini (about 2 medium zucchinis)
1 cup shredded sharp cheddar cheese
1/4 cup chopped fresh chives
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup granulated sugar
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a large bowl, combine the grated zucchini, shredded cheddar cheese, and chopped chives. Mix well and set aside.
In another bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and sugar until well combined.
In a separate bowl, beat the egg, then add the buttermilk and vegetable oil. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the zucchini mixture until evenly distributed.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with aluminum foil.
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For added flavor, consider mixing in some cooked and crumbled bacon or diced bell peppers.
Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
