  • 8 ounces udon noodles
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup sliced bell peppers (any color)
  • 1 cup shredded carrots
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon mirin (or rice vinegar)
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Add the sliced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3 minutes.
  4. Stir in the sliced bell peppers and shredded carrots, cooking for another 3-4 minutes until the vegetables are tender.
  5. Add the cooked udon noodles to the skillet, followed by the soy sauce, oyster sauce, mirin, and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Remove from heat and stir in the chopped green onions.
  7. Serve hot, garnished with sesame seeds if desired.
