  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 cup peach preserves
  • 1/4 cup whiskey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, salt, black pepper, and smoked paprika. Mix until just combined.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until cooked through and browned.
  5. While the meatballs are baking, prepare the sauce. In a medium saucepan over medium heat, combine the peach preserves, whiskey, apple cider vinegar, soy sauce, and Dijon mustard. Stir until the mixture is smooth and heated through, about 5 minutes.
  6. Once the meatballs are done, remove them from the oven and transfer them to the saucepan with the sauce. Gently toss to coat the meatballs in the sauce.
  7. Serve warm, garnished with additional parsley if desired.
