8 ounces sharp cheddar cheese, grated
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
1 cup milk
4 slices of hearty bread (such as sourdough or whole wheat)
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions
Preheat your broiler to high.
In a medium saucepan over medium heat, melt the butter. Once melted, stir in the flour and cook for about 1 minute, stirring constantly to form a roux.
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and begins to bubble, about 5 minutes.
Remove the saucepan from heat and stir in the grated cheddar cheese, Dijon mustard, Worcestershire sauce, paprika, cayenne pepper (if using), and season with salt and pepper to taste. Mix until the cheese is completely melted and the sauce is smooth.
Toast the slices of bread until golden brown on both sides.
Place the toasted bread on a baking sheet and spoon the cheese mixture generously over each slice.
Broil the bread with the cheese topping for 2-3 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
Remove from the oven, garnish with chopped parsley if desired, and serve immediately.
Notes
For a smoky flavor, add a few drops of liquid smoke to the cheese mixture.
Experiment with different cheeses such as Gruyère or a mix of cheeses for a unique taste.
