3 cups watermelon rind, peeled and diced (about 1 medium watermelon)
2 cups granulated sugar
1 cup water
1/4 cup lemon juice (freshly squeezed)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
Begin by preparing the watermelon rind. Remove the green outer skin and any pink flesh, then dice the white part of the rind into small pieces.
In a large pot, combine the diced watermelon rind, sugar, water, lemon juice, vanilla extract, ground cinnamon, and salt. Stir well to combine.
Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
Once boiling, reduce the heat to medium-low and let it simmer uncovered for about 45 minutes to 1 hour, stirring occasionally, until the mixture thickens and the rind becomes translucent.
To test the consistency, place a spoonful of the jam on a cold plate and let it sit for a minute. Run your finger through it; if it holds its shape, it’s ready. If not, continue simmering for a few more minutes.
Once ready, remove the pot from heat and let it cool slightly. Pour the jam into sterilized jars and seal them while still warm. Allow to cool completely before storing in the refrigerator.
Notes
For a spicier kick, add 1/4 teaspoon of ground ginger or a pinch of cayenne pepper during cooking.
Experiment with flavors by adding a few sprigs of fresh mint or basil while simmering for a refreshing herbal note.
