1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 cup pureed watermelon (about 2 cups diced watermelon)
1/2 cup chopped walnuts or pecans (optional)
1/2 teaspoon ground cinnamon (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and watermelon puree until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in the chopped nuts.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For a tropical twist, add 1/2 cup of shredded coconut to the batter.
