  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 pound smoked sausage, sliced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic, red bell pepper, and green bell pepper. Cook for an additional 3-4 minutes until the peppers are tender.
  4. Add the sliced smoked sausage to the skillet and cook for 5-7 minutes until browned.
  5. Pour in the diced tomatoes (with their juice) and heavy cream. Stir to combine.
  6. Add the Cajun seasoning, salt, and pepper. Bring the mixture to a simmer and let it cook for 5 minutes, stirring occasionally.
  7. Add the cooked penne pasta to the skillet and toss to coat in the sauce.
  8. Sprinkle the shredded cheddar cheese over the pasta and cover the skillet. Allow it to sit for 2-3 minutes until the cheese is melted.
  9. Garnish with sliced green onions before serving.

  • For a vegetarian version, substitute the smoked sausage with plant-based sausage or sautéed mushrooms.
