2 slices of whole grain bread
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
4 slices of deli turkey
2 slices of cheddar cheese
1/2 avocado, sliced
1/2 cup baby spinach
1/4 cup sliced cucumbers
Salt and pepper to taste
1 tablespoon olive oil (for grilling, optional)
Instructions
Start by spreading the mayonnaise and Dijon mustard evenly on one side of each slice of bread.
Layer the turkey slices on one slice of bread, followed by the cheddar cheese, avocado slices, baby spinach, and cucumbers. Season with salt and pepper to taste.
Place the second slice of bread on top, mayonnaise side down, to form a sandwich.
If desired, heat olive oil in a skillet over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
Remove from the skillet, slice in half, and serve immediately.
Notes
For a spicy kick, add sliced jalapeños or a dash of hot sauce to the sandwich.
Substitute the turkey with grilled chicken or ham for a different flavor profile.
