1 pound ribeye steak, at least 1 inch thick
2 tablespoons olive oil
Salt and pepper, to taste
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
4 tablespoons unsalted butter
Juice of 1 lemon
Instructions
Heat a large skillet over medium-high heat. Pat the steak dry with paper towels and season both sides generously with salt and pepper.
Add olive oil to the skillet. Once hot, carefully place the steak in the skillet and sear for 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.
Remove the steak from the skillet and let it rest on a cutting board for about 5 minutes.
In the same skillet, reduce the heat to medium and add the minced garlic, rosemary, and thyme. Sauté for about 1 minute until fragrant.
Add the butter to the skillet and let it melt, stirring to combine with the herbs and garlic. Squeeze in the lemon juice and stir well.
Slice the steak against the grain and drizzle the garlic herb butter over the top before serving.
Notes
For a smoky flavor, try grilling the steak instead of pan-searing.
You can also add a pinch of red pepper flakes to the garlic butter for a spicy kick.
