Instructions

  1. Preheat the oven to 325°F (160°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mixed dried fruit, chopped nuts, applesauce, orange juice, and granulated sugar. Stir until well combined.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. If using, fold in the brandy or rum, candied orange peel, and maraschino cherries until evenly distributed.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
