8 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 can (10 ounces) diced tomatoes with green chilies, undrained
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
1/4 cup chopped fresh cilantro (optional)
Instructions
In a medium saucepan over low heat, combine the softened cream cheese, shredded cheddar cheese, and shredded Monterey Jack cheese. Stir continuously until the cheeses are melted and smooth.
Add the can of diced tomatoes with green chilies (including the liquid), sour cream, garlic powder, onion powder, cumin, and chili powder to the cheese mixture. Stir until everything is well combined.
Continue to cook on low heat for about 5-10 minutes, stirring occasionally until the queso is heated through and creamy.
Season with salt and pepper to taste. If desired, stir in chopped fresh cilantro just before serving.
Serve warm with tortilla chips, fresh veggies, or use as a topping for tacos or nachos.
Notes
For a spicier queso, add diced jalapeños or a dash of hot sauce to the mixture.
For a smoky flavor, consider adding a teaspoon of smoked paprika or using smoked cheese varieties.
