- 2 cups cooked chicken, shredded
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1/2 teaspoon grated ginger
- 4 large flour tortillas
- 1 cup shredded carrots
- 1 cup sliced bell peppers (any color)
- 1 cup shredded red cabbage
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
- In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth and well combined.
- In a large mixing bowl, combine the shredded chicken with half of the peanut sauce, mixing until the chicken is evenly coated.
- Lay a flour tortilla flat on a clean surface. Spread a generous tablespoon of the remaining peanut sauce over the tortilla.
- Layer the chicken mixture, shredded carrots, sliced bell peppers, shredded cabbage, and cilantro on top of the sauce.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
- Slice each wrap in half diagonally and serve with lime wedges and extra peanut sauce on the side for dipping.
Notes
- For a vegetarian option, substitute the chicken with tofu or chickpeas.
