  • 2 cups cooked chicken, shredded
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated ginger
  • 4 large flour tortillas
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup shredded red cabbage
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth and well combined.
  2. In a large mixing bowl, combine the shredded chicken with half of the peanut sauce, mixing until the chicken is evenly coated.
  3. Lay a flour tortilla flat on a clean surface. Spread a generous tablespoon of the remaining peanut sauce over the tortilla.
  4. Layer the chicken mixture, shredded carrots, sliced bell peppers, shredded cabbage, and cilantro on top of the sauce.
  5. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
  6. Slice each wrap in half diagonally and serve with lime wedges and extra peanut sauce on the side for dipping.

Notes

  • For a vegetarian option, substitute the chicken with tofu or chickpeas.
  • Add sliced avocado or cucumber for extra freshness and crunch.
