1 pound ground beef
1 small onion, diced
1 small bell pepper, diced
2 cloves garlic, minced
1 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon mustard
1 teaspoon chili powder
Salt and pepper to taste
8 slices Texas toast
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.
Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for about 5 minutes, until the vegetables are softened.
Stir in the ketchup, Worcestershire sauce, brown sugar, mustard, chili powder, salt, and pepper. Mix well and let it simmer for about 10 minutes, stirring occasionally.
While the mixture simmers, preheat your oven to 375°F.
Place the Texas toast slices on a baking sheet and toast them in the oven for about 5 minutes, until lightly golden.
Remove the Texas toast from the oven and spoon the sloppy joe mixture evenly over each slice.
Top each sloppy joe with shredded cheddar cheese and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish with chopped parsley before serving.
Notes
For a spicier version, add diced jalapeños or a dash of hot sauce to the meat mixture.
Substitute ground turkey or chicken for a leaner option, and use whole grain Texas toast for added fiber.
