A delicious and hearty recipe for Texas Roadhouse Smothered Chicken, featuring tender chicken breasts topped with sautéed vegetables, cheese, and bacon.
Season the chicken breasts with salt, black pepper, garlic powder, and onion powder on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms, diced onions, and diced green bell pepper. Sauté for about 5-7 minutes until the vegetables are tender.
Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
Notes
For a spicy kick, add sliced jalapeños to the sautéed vegetables.
You can substitute the cheddar cheese with Monterey Jack or pepper jack for a different flavor profile.
