  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup diced onions
  • 1/2 cup diced green bell pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon (cooked)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, black pepper, garlic powder, and onion powder on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms, diced onions, and diced green bell pepper. Sauté for about 5-7 minutes until the vegetables are tender.
  5. Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the chicken.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
