Preheat your grill or grill pan over medium-high heat. If using a grill, make sure to oil the grates to prevent sticking.
In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and brown sugar. Rub this spice mixture evenly over both sides of the pork chops.
In another bowl, whisk together the apple cider vinegar, Worcestershire sauce, and Dijon mustard. Set aside.
Drizzle olive oil over the pork chops and place them on the grill. Cook for about 4-5 minutes on each side, or until the internal temperature reaches 145°F.
During the last minute of cooking, brush the pork chops with the vinegar mixture to add flavor and moisture.
Remove the pork chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute.
Garnish with fresh parsley before serving.
Notes
For a smoky flavor, try adding a few drops of liquid smoke to the marinade.
