- 2 slices of sourdough bread
- 1 tablespoon butter, softened
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 2 tablespoons diced jalapeños (fresh or pickled)
- 2 tablespoons diced tomatoes
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Preheat a skillet over medium heat.
- Spread butter evenly on one side of each slice of sourdough bread.
- In a bowl, combine the cheddar cheese, Monterey Jack cheese, jalapeños, tomatoes, cilantro, garlic powder, onion powder, salt, and pepper. Mix well.
- Place one slice of bread, butter-side down, in the skillet.
- Evenly spread the cheese mixture on top of the bread in the skillet.
- Top with the second slice of bread, butter-side up.
- Cook for about 3-4 minutes, or until the bottom slice is golden brown.
- Carefully flip the sandwich and cook for another 3-4 minutes, until the other side is golden and the cheese is melted.
- Remove from the skillet, let cool for a minute, then slice in half and serve.
Notes
- For a spicier kick, add more jalapeños or a dash of hot sauce to the cheese mixture.
- You can also substitute the cheeses with pepper jack for extra flavor.
- Serve with a side of salsa for dipping!
