A delicious twist on the classic grilled cheese sandwich, infused with Tex-Mex flavors.

Ingredients

  • 2 slices of sourdough bread
  • 1 tablespoon butter, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tablespoons diced jalapeños (fresh or pickled)
  • 2 tablespoons diced tomatoes
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter evenly on one side of each slice of sourdough bread.
  3. In a bowl, combine the cheddar cheese, Monterey Jack cheese, jalapeños, tomatoes, cilantro, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Place one slice of bread, butter-side down, in the skillet.
  5. Evenly spread the cheese mixture on top of the bread in the skillet.
  6. Top with the second slice of bread, butter-side up.
  7. Cook for about 3-4 minutes, or until the bottom slice is golden brown.
  8. Carefully flip the sandwich and cook for another 3-4 minutes, until the other side is golden and the cheese is melted.
  9. Remove from the skillet, let cool for a minute, then slice in half and serve.

Notes

  • For a spicier kick, add more jalapeños or a dash of hot sauce to the cheese mixture.
  • You can also substitute the cheeses with pepper jack for extra flavor.
  • Serve with a side of salsa for dipping!
