A delicious recipe for tender pork chops glazed with a sweet and sour sauce, perfect for an easy dinner.

  • 2 bone-in pork chops (about 1 inch thick, approximately 1 pound total)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the pork chops with salt and black pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 3-4 minutes on each side until they are golden brown.
  4. While the pork chops are searing, in a small bowl, whisk together the pineapple juice, brown sugar, apple cider vinegar, soy sauce, minced garlic, and ground ginger.
  5. Once the pork chops are browned, pour the sweet and sour mixture over them in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
  7. Remove the skillet from the oven and transfer the pork chops to a plate. Cover with foil to keep warm.
  8. In the same skillet, bring the sauce to a simmer over medium heat. In a small bowl, mix the cornstarch and water to create a slurry, then add it to the sauce. Stir until the sauce thickens, about 2-3 minutes.
  9. Serve the pork chops drizzled with the sweet and sour glaze and garnish with chopped green onions if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the glaze.
  • Serve with steamed rice or roasted vegetables for a complete meal.
