2 cups frozen tater tots
1 pound breakfast sausage
1 cup shredded cheddar cheese
6 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 cup chopped green onions (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula. Drain excess grease if necessary.
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
In a greased 9×13 inch baking dish, spread the cooked sausage evenly across the bottom.
Layer the frozen tater tots on top of the sausage, arranging them in a single layer.
Pour the egg mixture evenly over the tater tots and sausage.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is bubbly and golden.
Remove from the oven and let it cool for about 5 minutes before slicing. Garnish with chopped green onions if desired.
Notes
For a spicier kick, consider adding diced jalapeños or a dash of hot sauce to the egg mixture.
You can also substitute the breakfast sausage with diced ham or cooked bacon for a different flavor profile.
