1 pound frozen tater tots
1 pound breakfast sausage
1/4 cup all-purpose flour
2 cups milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
4 large eggs
1 cup shredded cheddar cheese
1/4 cup chopped green onions (for garnish)
Instructions
Preheat your oven to 425°F. Spread the frozen tater tots on a baking sheet and bake according to package instructions until golden and crispy, about 25-30 minutes.
While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.
Sprinkle the flour over the cooked sausage and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-5 minutes. Add garlic powder, onion powder, black pepper, and salt. Stir to combine and remove from heat.
In a separate skillet, fry the eggs to your liking (sunny-side up, over-easy, etc.).
To assemble the bowls, place a generous portion of crispy tater tots at the bottom. Top with sausage gravy, a fried egg, and sprinkle with shredded cheddar cheese and chopped green onions.
Serve immediately and enjoy!
Notes
For a healthier option, use turkey sausage instead of pork sausage.
