  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 425°F. Spread the frozen tater tots on a baking sheet and bake according to package instructions until golden and crispy, about 25-30 minutes.
  2. While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.
  3. Sprinkle the flour over the cooked sausage and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-5 minutes. Add garlic powder, onion powder, black pepper, and salt. Stir to combine and remove from heat.
  5. In a separate skillet, fry the eggs to your liking (sunny-side up, over-easy, etc.).
  6. To assemble the bowls, place a generous portion of crispy tater tots at the bottom. Top with sausage gravy, a fried egg, and sprinkle with shredded cheddar cheese and chopped green onions.
  7. Serve immediately and enjoy!
