2 cups frozen tater tots
1 pound breakfast sausage
1/4 cup all-purpose flour
2 cups milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup shredded cheddar cheese
4 large eggs
2 tablespoons chopped fresh parsley (optional)
Instructions
Preheat the oven to 425°F. Spread the frozen tater tots in a single layer on a baking sheet and bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into small pieces as it cooks.
Once the sausage is cooked, sprinkle the flour over the sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
Gradually whisk in the milk, stirring constantly until the mixture thickens and becomes creamy, about 5-7 minutes. Add garlic powder, onion powder, black pepper, and salt. Stir to combine and remove from heat.
In a separate skillet, cook the eggs to your liking (scrambled, fried, or poached).
To assemble the breakfast bowls, place a generous portion of tater tots at the bottom of each bowl. Top with sausage gravy, cooked eggs, and a sprinkle of shredded cheddar cheese.
Garnish with chopped parsley if desired and serve immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños to the sausage while cooking.
Swap out the breakfast sausage for turkey sausage or a plant-based sausage alternative for a lighter or vegetarian option.
