2 pounds pork loin
1 cup cola (regular or diet)
1/2 cup barbecue sauce
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 onion, sliced
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, mix together the cola, barbecue sauce, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the pork loin on all sides until browned, about 3-4 minutes per side.
Remove the pork loin from the skillet and set aside. In the same skillet, add the sliced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
Return the pork loin to the skillet and pour the cola mixture over the top.
Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 1 hour, or until the internal temperature of the pork reaches 145°F (63°C).
Remove the skillet from the oven and let the pork rest for 10 minutes before slicing.
Serve the sliced pork loin with the sauce and onions spooned over the top. Garnish with fresh parsley.
Notes
For a spicier kick, add 1 teaspoon of cayenne pepper or your favorite hot sauce to the cola mixture.
Serve the pork loin with a side of coleslaw or cornbread for a true Southern meal experience.
