2 pounds pork loin
1/2 cup brown sugar, packed
1/4 cup Dijon mustard
1/4 cup soy sauce
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon paprika
Instructions
Preheat your oven to 375°F.
In a mixing bowl, combine the brown sugar, Dijon mustard, soy sauce, olive oil, minced garlic, black pepper, salt, thyme, and paprika. Stir until well blended to create a marinade.
Place the pork loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Remove the pork loin from the marinade and place it in a roasting pan. Reserve the marinade for later use.
Roast the pork loin in the preheated oven for 25-30 minutes per pound, or until the internal temperature reaches 145°F. Baste the pork with the reserved marinade halfway through cooking.
Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute for a juicier result.
Slice the pork loin and serve it with your favorite sides.
Notes
For a sweeter glaze, add an extra tablespoon of brown sugar to the marinade.
To add a bit of heat, mix in 1 teaspoon of red pepper flakes or a dash of hot sauce to the marinade.
