2 pounds boneless, skinless chicken thighs
1 cup pineapple chunks (fresh or canned, drained)
1 cup teriyaki sauce
1/2 cup brown sugar
1/4 cup soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 cup bell peppers, sliced (red, yellow, or green)
1/4 cup green onions, chopped (for garnish)
Cooked rice (for serving)
Instructions
Place the chicken thighs in the bottom of the crockpot.
In a separate bowl, mix together the pineapple chunks, teriyaki sauce, brown sugar, soy sauce, minced garlic, minced ginger, black pepper, and red pepper flakes (if using).
Pour the sauce mixture over the chicken in the crockpot, ensuring the chicken is well coated.
Add the sliced bell peppers on top of the chicken and sauce.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
Once cooked, shred the chicken in the crockpot using two forks and stir to combine with the sauce.
Serve over cooked rice and garnish with chopped green onions.
Notes
For a sweeter flavor, add an extra 1/4 cup of brown sugar.
For a spicier kick, include diced jalapeños or a splash of sriracha in the sauce mixture.
