4 cups green cabbage, shredded
1 cup red cabbage, shredded
1 cup carrots, grated
1 cup apples, julienned (about 2 medium apples)
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (adjust to taste)
1/4 cup chopped fresh parsley (optional)
Instructions
In a large bowl, combine the green cabbage, red cabbage, carrots, and apples. Toss to mix well.
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, black pepper, and cayenne pepper until smooth.
Pour the dressing over the cabbage and apple mixture. Toss everything together until the vegetables and apples are evenly coated with the dressing.
If using, fold in the chopped parsley for added flavor and color.
Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
For added crunch, consider mixing in some chopped nuts, such as walnuts or pecans.
Substitute Greek yogurt for half of the mayonnaise for a lighter version with a tangy flavor.
