1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped onion
1/4 cup milk
1 large egg
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1/2 cup pineapple chunks (canned or fresh)
Instructions
Preheat your oven to 375°F.
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, milk, egg, garlic powder, salt, and black pepper. Mix until well combined.
Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.
While the meatballs are baking, prepare the sweet and sour sauce. In a medium saucepan, combine the ketchup, brown sugar, apple cider vinegar, soy sauce, and Worcestershire sauce. Bring to a simmer over medium heat, stirring occasionally.
Once the meatballs are done, add them to the saucepan with the sweet and sour sauce. Stir to coat the meatballs evenly.
Add the pineapple chunks to the saucepan and simmer for an additional 5 minutes to heat through.
Serve the sweet and sour meatballs warm over rice or with toothpicks as an appetizer.
Notes
For a spicier kick, add a teaspoon of crushed red pepper flakes to the sauce.
Substitute ground turkey or chicken for a leaner option while keeping the flavor intact.
