1 pound beef sirloin, thinly sliced
1 tablespoon vegetable oil
1 bell pepper, chopped (any color)
1 onion, sliced
1 cup pineapple chunks (fresh or canned)
1 cup broccoli florets
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup brown sugar
2 tablespoons ketchup
1 tablespoon cornstarch
1/2 cup water
Salt and pepper to taste
Cooked rice for serving
Instructions
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced beef and cook until browned, about 5 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add the onion and bell pepper. Stir-fry for about 3 minutes until they begin to soften.
Add the broccoli and pineapple chunks to the skillet, cooking for another 2-3 minutes.
In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, ketchup, cornstarch, and water until smooth.
Return the beef to the skillet and pour the sauce over the mixture. Stir well to combine and cook for an additional 3-4 minutes, until the sauce thickens and everything is heated through. Season with salt and pepper to taste.
Serve the sweet and sour beef over cooked rice.
Notes
For a spicier version, add a teaspoon of red pepper flakes or a splash of sriracha to the sauce.
Substitute the beef with chicken or tofu for a different protein option. Adjust cooking times accordingly.
