Delicious Swedish Semla Buns filled with cream and berry jam, perfect for a sweet treat.

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ½ cup whole milk, warmed to about 110°F
  • ¼ cup granulated sugar
  • 1 teaspoon ground cardamom
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup unsalted butter, softened
  • 1 cup heavy whipping cream
  • ½ cup berry jam (such as raspberry or strawberry)
  • Powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Add the flour, ground cardamom, salt, egg, and softened butter to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and place them on the prepared baking sheet.
  7. Cover the buns with a towel and let them rise for another 30 minutes.
  8. Bake the buns in the preheated oven for 15-20 minutes, or until golden brown. Allow them to cool completely on a wire rack.
  9. While the buns are cooling, whip the heavy cream until stiff peaks form.
  10. Once the buns are cool, slice the tops off and hollow out a bit of the inside. Fill each bun with a spoonful of berry jam and a generous dollop of whipped cream. Replace the tops and dust with powdered sugar before serving.

Notes

  • For a richer flavor, consider adding a teaspoon of vanilla extract to the whipped cream.
  • You can also substitute the berry jam with lemon curd or chocolate spread for a different twist.
