A delicious and hearty stuffed Italian meatloaf filled with marinara sauce, mozzarella cheese, and vegetables.

  • 1 cup Italian-style bread crumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup marinara sauce, divided
  • 1 cup shredded mozzarella cheese
  • ½ cup diced bell pepper
  • ½ cup diced onion
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, bread crumbs, egg, garlic powder, onion powder, oregano, basil, salt, and black pepper. Mix until just combined.
  3. On a large sheet of parchment paper or wax paper, shape the meat mixture into a rectangle about 1 inch thick.
  4. Spread half of the marinara sauce over the meat, leaving a small border around the edges.
  5. Sprinkle the mozzarella cheese, bell pepper, onion, and Parmesan cheese evenly over the sauce.
  6. Starting from one end, carefully roll the meatloaf up, using the parchment paper to help guide it. Pinch the ends to seal the filling inside.
  7. Place the rolled meatloaf seam-side down in a baking dish.
  8. Spread the remaining marinara sauce over the top of the meatloaf.
  9. Bake for 1 hour, or until the internal temperature reaches 160°F.
  10. Let it rest for 10 minutes before slicing.

Notes

  • For a spicier kick, add red pepper flakes to the meat mixture.
  • You can substitute ground turkey or chicken for a lighter version.
  • Serve with a side of garlic bread or a fresh salad for a complete meal.
