In a mixing bowl, combine the Boursin cheese, chopped spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
Stuff each chicken breast pocket with the Boursin cheese mixture, dividing it evenly among the breasts.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
Once the chicken is seared, top each breast with halved cherry tomatoes and shredded mozzarella cheese.
