Delicious stuffed chicken breasts filled with creamy Boursin cheese, fresh spinach, and topped with cherry tomatoes and mozzarella for a flavorful dinner.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 8 ounces Boursin cheese (any flavor)
  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the Boursin cheese, chopped spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast pocket with the Boursin cheese mixture, dividing it evenly among the breasts.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  6. Once the chicken is seared, top each breast with halved cherry tomatoes and shredded mozzarella cheese.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  8. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • For added flavor, consider marinating the chicken breasts in Italian dressing for an hour before stuffing.
  • You can also substitute the Boursin cheese with any flavored cream cheese for a different taste.
  • For a lower-carb option, serve the chicken on a bed of zucchini noodles instead of pasta.
