- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup strawberries, hulled and sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- In a large mixing bowl, combine the green cabbage, red cabbage, carrots, strawberries, and red onion. Toss gently to mix.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, lemon juice, lemon zest, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until all the ingredients are well coated.
- Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
