A refreshing and vibrant coleslaw featuring strawberries and a zesty lemon dressing, perfect for summer gatherings.

Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup strawberries, hulled and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, strawberries, and red onion. Toss gently to mix.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, lemon juice, lemon zest, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the ingredients are well coated.
  4. Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the coleslaw a good stir and adjust seasoning if necessary.

Notes

  • For added crunch, consider mixing in some chopped nuts, such as pecans or walnuts.
