2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
2 cups peeled and diced apples (about 2 medium apples)
1 cup chopped dates, pitted
1/2 cup chopped walnuts (optional)
1 cup brown sugar (for toffee sauce)
1/2 cup unsalted butter (for toffee sauce)
1/2 cup heavy cream (for toffee sauce)
1 teaspoon vanilla extract (for toffee sauce)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
Fold in the diced apples, chopped dates, and walnuts (if using).
Pour the batter into the prepared baking pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
While the cake is baking, prepare the toffee sauce. In a saucepan over medium heat, combine the brown sugar, butter, and heavy cream. Stir until the mixture comes to a boil, then reduce the heat and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in the vanilla extract.
Once the cake is done, let it cool in the pan for 10 minutes. Poke holes in the top of the cake with a skewer or toothpick, then pour half of the warm toffee sauce over the cake, allowing it to soak in.
Serve the cake warm, drizzled with the remaining toffee sauce.
Notes
For a spicier flavor, add 1/4 teaspoon of ground ginger to the dry ingredients.
Substitute the apples with pears or a mix of both for a different fruity twist.
