2 cups cooked egg noodles
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons vegetable oil
1 cup broccoli florets
1 red bell pepper, sliced
1 green onion, chopped
1 teaspoon sesame oil
Salt and pepper to taste
Instructions
In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and ginger. Set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Add the broccoli and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Add the cooked egg noodles to the skillet, tossing everything together to combine. Drizzle with sesame oil and sprinkle with chopped green onion before serving.
Notes
For a spicier kick, add red pepper flakes to the sauce.
You can also substitute the chicken with shrimp or tofu for a different protein option.
