1 pound ground beef
1 cup breadcrumbs
1/2 cup shredded cheddar cheese
1/4 cup finely chopped onion
1/4 cup milk
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup BBQ sauce
4 hoagie rolls
1/2 cup shredded lettuce
1/2 cup sliced tomatoes
1/4 cup sliced pickles
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, breadcrumbs, cheddar cheese, chopped onion, milk, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned.
In a saucepan over medium heat, combine the cooked meatballs and BBQ sauce. Stir to coat the meatballs evenly and heat through for about 5 minutes.
While the meatballs are heating, slice the hoagie rolls in half and toast them lightly in the oven for about 3-5 minutes.
To assemble the subs, place a few meatballs in each toasted hoagie roll, then top with shredded lettuce, sliced tomatoes, and pickles.

Notes
For a spicier kick, add chopped jalapeños to the meatball mixture or use a spicy BBQ sauce.
