Delicious spinach garlic meatballs stuffed with mozzarella, perfect for a hearty meal.

  • 1 pound ground beef
  • 1 cup fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces mozzarella cheese, cut into small cubes
  • 1/2 cup marinara sauce (for serving)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the ground beef, chopped spinach, breadcrumbs, Parmesan cheese, onion, garlic, egg, oregano, salt, and pepper. Mix until well combined.
  3. Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella in the center and wrap the meat around it, forming a ball. Repeat with the remaining mixture.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Add the meatballs and cook for about 5 minutes, turning occasionally, until browned on all sides.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and the internal temperature reaches 160°F.
  6. Serve the meatballs with marinara sauce drizzled on top.

Notes

  • For a lighter version, substitute ground turkey for ground beef.
  • You can also add chopped bell peppers or mushrooms to the meat mixture for extra flavor and nutrition.
